Story
Named after a beach and iron mine near Santiago de Cuba, where American engineer Jennings Cox is credited with mixing rum, lime and sugar for guests around 1898. Constante Ribalaigua of Havana's El Floridita turned it into a frappé in the 1930s, and Ernest Hemingway became its most famous regular.
Bartender notes
Adjust sugar in 0.1 oz increments to match lime acidity.
Tips
- Fresh lime and a hard shake are the whole recipe; there is nowhere to hide.
