Kiwi Swizzle

Ingredients

• 60 ml White Rum
• 15 ml Green Chartreuse
• 15 ml Lime Juice
• 15 ml Demerara Syrup
• 1 Kiwi
• 30 ml Pineapple Juice

Method

1. Peel and cut the kiwi, then muddle it with the demerara syrup in a highball glass.
2. Add the rum, Chartreuse, lime juice, and pineapple juice.
3. Fill two-thirds of the glass with crushed ice.
4. Rotate a swizzle stick between your palms, or stir briskly with a barspoon, until the glass frosts.
5. Add more crushed ice to fill.
6. Optional garnish: pineapple fronds slice of kiwi.
