Ramos Fizz
A shaken cocktail featuring Gin, Lime juice, Lemon juice.

Ingredients
- 45 ml Gin
- 15 ml Lime Juice
- 15 ml Lemon Juice
- 15 ml Simple Syrup
- 45 ml Cream
- 15 ml Egg White
- 6 dash Orange Flower Water
- 1 Club soda
Method
- Add the gin, citrus juices, syrup, egg white, and orange flower water to a shaker, reserving the cream and soda.
- Shake without ice until foamy, then add the cream.
- Add ice and shake vigorously until very cold and thickly foamed.
- Double-strain into a chilled highball glass without serving ice.
- Slowly add cold soda water, pausing to let the foam settle before the final splash.
Story
Henry C. Ramos introduced it at his Imperial Cabinet Saloon in New Orleans in 1888. It was shaken so long that in busy years he employed a line of 'shaker boys' passing each one down the bar. Governor Huey Long later flew a Roosevelt Hotel bartender to New York to teach it to a hotel there.
Tips
- Dry-shake without ice first, then shake with ice; the foam needs both.
