Ingredients

• 60 ml Rye Whiskey
• 22.5 ml Lemon Juice
• 22.5 ml Simple Syrup
• 2 dash Absinthe
• 1 Egg White

Method

1. Add Rye Whiskey, Lemon Juice, Simple Syrup, Absinthe and Egg White to a shaker.
2. Shake without ice until foamy.
3. Add ice and shake until cold.
4. Double-strain through a cocktail strainer and a fine sieve into a chilled coupe.
5. Optional garnish: an aromatic-bitters swirl on the foam.
