The Dead Rabbit

Ingredients

• 30 ml Mezcal
• 22.5 ml Tequila Blanco
• 7.5 ml Cynar
• 22.5 ml Raspberry Syrup
• 30 ml Lime Juice
• 1 Egg White

Method

1. Add Mezcal, Tequila Blanco, Cynar, Raspberry Syrup, Lime Juice and Egg White to a shaker.
2. Shake without ice until foamy.
3. Add ice and shake until cold.
4. Double-strain through a cocktail strainer and a fine sieve into a chilled coupe.
